Of the world’s seven continents, Africa is second only to Asia in terms of population and land size. The continent contains just about every climate and geography type you can imagine, as it stretches from the bone-dry desert sands of the north, to rain-drenched jungles, across the savannas where human life first emerged, to the mountainous tip of South Africa. Africa, quite literally, is where cooking began. In Africa, many millennia ago, our relatives first learned to tame the flames of fire to produce cooked foods. Without this advance, cuisine had no chance to develop. Not surprisingly for such a large continent with so much climactic diversity, there are very distinctive styles of cuisine. Contact with colonizing and slave-trading Europeans began an exchange of foods between Africa and the New World, which brought sweet potatoes, chiles, and tomatoes to Africa -- and black-eyed peas, okra, and yams to the Americas.

I think this was a great influence on my cooking and baking. My husband and I live with my daughter, her husband and three children in South Africa (they have a signage business here and one in Maputo, Mozambique)and my son is a Forensic Mental Nurse in Australia.

Warm Apple Pocket

This was pretty good. I used puff pastry cos that is what I had, so I ended up with a bif rectangular "pie". This was very easy to make and the 40 mins to cook meant the apple cooked perfectly without needing any pre-cooking. I though putting liquid vanilla extract with the dry ingredients would be messy, so I used vanilla sugar, which I also sprinkled on top before baking. I used a milk wash instead of egg cos I can't stand the waste when using an egg wash. Looked very pretty and tasted good, went well with custard.

i baked this 2 days ago.. I must say on the day I baked it.. it was way too sweet for my taste and decided not to do it again. However, the following day they tasted just great :) I added 1 tsp of cinnamon to the crackers to add a hint of taste. However next time I would do the following changes. Put the crackers and butter in a food processor since even tiny sized crackers won't hold well. I would decrease the amount of sugar put with the crackers. I would boil the sugar and butter mix for half a minute only. I would prebake the crust for only 5 mins I would add more than a cup of chocochips But overall, its an amazing recipe and very easy to do.

Best Big, Fat, Chewy Chocolate Chip Cookie

I baked these cookies last weekend and everybody loved them. They were chewy and crispy from the edges. I loved the taste too.. not very sweet as some other recipes... yet am still searching for the ultimate "cookie taste". For this recipe I subsituted the stated amount of butter with half butter half vegetable oil and turned out just perfect. The batter was slightly sticky and messy so I had to grease my hands with some veg. oil to shape it into balls. Thus did not grease the baking sheet. yummy recipe ;)
