OMG, I have had so many pancake disasters but this is a foolproof, quick recipe. I made them last Sunday for my four year old niece and she loved them. The only changes I made were the following:
- Didn't have buttermilk so I substituted with 1 1/4 cup milk and just over 1 Tbsp vinegar
- Added 1 tsp vanilla to the liquid mixture
- Added 1/4 tsp salt to the dry mixture
I made a big batch after work today which I'm going to freeze and just heat up in the toaster as needed.
