Fruity Curry Chicken Salad

I made this for dinner then took the leftovers to work for lunch. I used a Granny Smith apple and didn't measure anything except the curry powder. I probably used less mayo than specified this way. This will be making regular appearances in my lunch box this summer. Thank you.

Italian Bread Wedges

I used this as an appetiser when we had friends round for dinner. My husband said that he would eat this as an accompianment to pasta as well. I did make my own italian dressing and as I only have small pizza pans I made it on a retangular baking pan. So we had Italian Bread Squares. Thankyou for an excellent recipe I will make again.

Bar-B-Que Sauce

I made this when I realised I'd run out of barbecue sauce. Friends who came round for the first barbecue of the year said this was really good and my husband was disappointed that he never got to try it. So I'll be making this again soon. Many Thanks.

Portobello Mushroom Stroganoff

One of our favourite restaurants has a mushroom stroganoff on their vegetarian menu which my daughter loves. She has been asking me for some time to try and make it at home. This recipe she said is just as good. I followed it exactly and it was far easier than I imagined and very quick to make as well. Another one to add to the folder I am compiling for her. Oatmeal Peanut Butter Cookies

Green Pepper Tomato Salad

I will definitely make this again. I used halved cherry tomatoes and an extra green pepper. It was sitting in the fridge for about 4 hours and the flavour of the dressing really shone through. Many Thanks.

Thick 'n' Chewy Pizza

My husband and daughter were adamant yesterday that they wanted pizza for dinner. I was equally adamant that as it's been raining nearly continuously for the past 3 days I was not going out to get the ingredients for their usual pizza. So I did a search and came up with this recipe to use ingredients I already had in. They are very glad I did. The proportions for the crust were perfect and the colour of the crust was lovely. With the topping I did leave out the olives due to personal preference. I also added in the onion and pepper to the meat before it was completely cooked to soften them a bit. I might add a little more hot pepper sauce into the topping next time. But otherwise this was perfection. Thankyou so much.

Pasta and Herbs

Maybe it was because I used both dried pasta and herbs, but we all thought this was just ok. I am however going to give this another go soon with fresh pasta and herbs and cut down to a 1/3 cup of butter. I have a feeling we might prefer it that way. Thanks for letting me try.

Onion, Garlic, Cheese Bread

After reading reviews that the onion overpowered the garlic, I cut down on the amount I used. I also cubed the cheese instead of shredding. This bread had a lovely crust and just enough garlic taste. Many Thanks.

Chicken Marsala

Artichoke Spinach Lasagna

Excellent and a big hit in my house. I used fresh baby spinach and no cook noodles. When I took the Mozzarella out I realised I'd mistakenly bought a mozzarella/cheddar mix so used that instead. I also cut down on the feta cheese slightly. This looked beautiful when it came out of the oven and tasted even better. Definitely a family favourite. Thankyou so much.

Yummy Pesto Mashed Potatoes
