Waffles II

simple, fantastic, elegant and yummy. They were easy to make and fun to modify. I always try to cram nutritious ingredients into everything for my 4 year old so this was perfect for adding, molasses, psyllium husk and wheat germ.

Sea Bass Cuban Style

I used scallops instead of sea bass and left out the capers. I put it on a bed of rice, but I think it would have been better on penne pasta or something like that, which is what I will do next time. And I WILL be cooking this again... it was a big hit!!

Roasted Red Pepper Lasagna

Fantastic recipe. I tweaked it a little: I added two layers each of cooked chicken breast, whole black olives (same layer as chicken), and ricotta cheese. It certainly wasn't a vegetarian dish when I was through, but it tasted GREAT.

Roasted Vegetable Lasagna

This was good. I think that I left my vegies too big. Next time I will cut them smaller. Also, the eggplant was bitter. I guess I should have sweated it.

Gourmet Mushroom Risotto

Mmmmm.... Delicious! We don't like Parmesan so I used 1/4 cup fat free half and half at the end. Also, I used 1.5 cups of wine for 2 cups of rice. So good!

Peanut Butter and Banana Smoothie

Yummy... this is one of my favorite snacks in smoothie form. Next time I will freeze the banana as I am sure it will be even more delicious that way. I used 1/2 c. skim milk, 2 generous tablespoons of peanut butter, and 1 Tbsp of agave instead of honey. Thanks for the recipe!

Portobello Penne Pasta Casserole

I really liked this recipe. I am allergic to gluten so I used gluten free penne. Instead of the 1/4 cup all-purpose flour, I used 1 Tbsp soy flour, 1 Tbsp tapioca flour, and 2 Tbsp brown rice flour. I also added 1 Tbsp corn starch to the milk. I doubled the garlic and instead of the soy sauce, I used 1 Tbsp. salt. OK, so I didn't exactly make this recipe as/is, but this version came out really, really good. Next time, I am going to try the soy sauce. I am very curious... Thanks for the recipe!

Texas Spoon Bread

OK, I have never had Texas Spoon Bread before so I have nothing to compare this to, but it was really good. I am allergic to gluten so I was looking for a recipe along the lines of corn bread without any wheat flour. This was the recipe that fit the bill. It was so good! I served it with Black-Eyed Pea Gumbo from this site. It'd be good with any soup or stew. Mmmm... I'll be making this one again! Thank you so much!!!! It is really hard to find bread recipes that I can eat.

Black-Eyed Pea Gumbo

Wow! This was good. And healthy, which is always nice. I only added the can of tomatoes with jalapenos, not the plain can of tomatos. Instead, I added a box of frozen okra. I also added a tablespoon of creole seasoning mix (from this website) and some salt. Also about 2 cups of extra water. Mmm, mmm, good! I served it with Texas Spoonbread (yet another recipe from this site). We will definitely be having this again.

Catherine's Spicy Chicken Soup

This was a very good soup. Like many others, I did not put in the sour cream. Served it on the side. I also didn't put in the tomato soup. This reminded me of Sopa Azteca - a mexican soup. I served it with tortilla chips (baked in the oven) and cheese and avocado. It was a nice soup for a winter night with a sick hubby.
