Cha Cha's White Chicken Chili

I LOVE LOVE LOVE this recipe! Can't believe I'm only reviewing it now...I've been making this for a good 2 years now. I simplify it quite a bit though...I only use green chiles, garlic, onions, cumin, italian seasoning, chicken (canned or rotisserie), broth and combo of great northern and white kidney beans. Perfect EVERY time! Wonderful recipe!!!

I loved this recipe! It took a little prep to get it going but it was worth the time. I added celery and cut back on the mushrooms a bit, and didn't have a problem.

Garlic Cheese Chicken Rollups

Delicious! I used Laughing Cow garlic & herb cheese wedges and also sprinkled a little feta, italian seasoning and pepper. I stuffed the chicken with roasted red peppers, artichoke hearts and capers and then drizzled the butter and dipped in bread crumbs. My guests' plates were clean!!
