INGREDIENTS
1/4 cup chopped green pepper
2 tablespoons onion, chopped
1 garlic clove, minced
1 1/2 teaspoons butter or margarine
1/4 pound fully cooked smoked sausage, cut into 1/2-inch slices
1 (14.5 ounce) can diced tomatoes, undrained
1 cup canned ranch-style or chili beans
1/8 teaspoon dried oregano
1/8 teaspoon pepper
Hot cooked rice

DIRECTIONS
In a skillet, saute green pepper, onion and garlic in butter until crisp-tender. Add sausage; cook and stir until browned. Add the tomatoes, beans, oregano and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 20-25 minutes or until thickened. Serve over rice.

Surprisingly good and very quick and simple to throw together. I was tempted to add chili powder, but am glad I didn't, it was perfectly seasoned as stated.

My first time making Red Beans n Rice, and it was super easy! I thought I'd have to add more spices, but it was flavorful...just perfect.

I'm new to the South and have had beans and rice served to me one a couple occasions already, I decided I try some at home. I added oregano and thyme and a pinch of red pepper. Very basic dish but it was pretty good.

This was tasty! 5 stars for easy prep and low cost. 4 stars because the kids didn't love it, though they did eat it. I wasn't sure if I was supposed to, but I drained the beans because most bean recipes say to drain. Looking forward to the left overs!
