INGREDIENTS
1 cup uncooked long grain rice
1 medium onion, chopped
2 tablespoons vegetable oil
2 cups boiling water
1 medium green pepper, chopped
1 1/2 teaspoons chili powder
1 teaspoon salt
1 (14.5 ounce) can diced tomatoes, drained

DIRECTIONS
In a skillet, saute rice and onion in oil until rice is browned and onion is tender. Stir in the water, green pepper, chili powder and salt. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until rice is tender. Stir in tomatoes; heat through.

Very good Mexican style rice. I also used 1/2 seeded minced jalapeno and some garlic powder. I also subbed one cup chicken broth for 1 cup water. I like to use the diced tomatoes with green chilies for even more spice.

I have never tried anything like this before - delicious!!! I added a bit too much water and therefore it was a bit stodgy, but I shall keep on practicing. I was so eager to try it I forgot to take a photo!!
