Much like Chicken Saltimbocca, this is chicken smothered in parmesan cheese and rolled with mozzarella and prosciutto and baked in white wine.

Absolutely Delicious Stuffed Calamari

Submitted by: UNREFINEDNERD
Calamari tubes are stuffed with seafood and baked in a rich cream sauce before serving over a bed of linguine. This is probably the best calamari, if not the best entree, you'll ever have!

Acapulco Margarita Grouper

Submitted by: Bill Echols
Sea bass or any firm-fleshed fish may be used if grouper is not available. The grilled fish and fresh salsa are terrific when served with grilled corn and margaritas.

Adobo Chicken with Ginger

Submitted by: Liza Cranis
This is considered the Philippine national dish. The combination of soy sauce, vinegar, garlic, ginger and peppercorns is delicious and actually preserves the chicken! Great for picnics. My mother taught me how to cook this, using her variation from the original recipe. A delicious, cheap and easy dish! Serve it hot with hot steamed Jasmine rice.

Inspired by authentic West African cooking, this delicious stew combines vegetables and peanut butter with a little heat from a medley of spices. Alter the recipe to suit your preferences--it lends itself beautifully to improvisation.

Alder Plank Smoked Salmon

Submitted by: Smokin' Ron
This smoked salmon derives its flavor from Alder wood planks. I get these planks at the local lumber yard. Be sure you tell whoever helps you that you are cooking salmon on the wood so that you do not get any creosote wood or other treated wood. Also, make sure you know what plank size will fit in your smoker before you go to get the wood. This salmon will come out very moist and smoky, so be prepared for some of the best smoked fish you've ever eaten!

Amaretto Chicken

Rich and tasty. I had this in a restaurant years ago, experimented with it at home until I finally got it right.

Ancho Chile Fettuccini with Cilantro-Tomatillo Cream Sauce

Submitted by: Bryce Fegley
Rather than make fettuccine colored with spinach or tomatoes, I wanted to create something with color AND flare. Here is my idea. Try serving with grilled skewered chicken and mushrooms, marinated with lime, garlic, cumin, salt and pepper.

Apples and Cheese pocketed inside moist chicken are perfectly complimented by a very rich egg-based sweet creme sauce. This recipe is elegant but uses simple ingredients, and easy on the pocketbook!

My original version for the Argentinean recipe. Rich and delicious. Any meat can be used for this recipe, just be sure to cut it up into tiny pieces.

For a great tasting beef dish from Asia, fire meat is delicious and easy to prepare. It originates from China, offering a refreshing change from standard fare recipes. Ice cold beer is the beverage recommended with fire meat.

A fun dinner that lets the family make them how they want it. Meatballs are grilled then placed into a lettuce leaf with rice and vegetables. Then dip into the zippy Asian-style sauce.
